Centennial Dinner
This menu has been created in celebration of The Fairmont Empress' Centennial Anniversary, January, 1908. Guests can step back in time and sample a cuisine as served in the hotel at the turn of the century.
The dinner menu begins with Lobster Newburg, followed by Florentine Helen Spinach Salad with Blue Cheese stuffed Peached Pear, palates are freshened with a Punch Romaine, the main course is the traditional Tournedos Rossini, Beef Tenderloin, Foie Gras and Black Truffles, finishing with a rich Chocolate Soufflé.
The theming of the event can be completed by adding floor length white cloths, traditional rose posies as centrepieces with our staff dressed in burgundy tail coats.
